There are few dishes, like Galician octopus, that connect me immediately to my country, Spain. Although called “Galician,” this dish is found in every corner of our land.

Here, octopus is the star, with the rest of the ingredients adding subtle notes of flavor: Spanish imported sweet paprika and the finest Spanish Picual extra virgin olive oil at Casa María.

At Casa María, we refine it slightly by adding accents of red pepper gel and a few coriander leaves. And to give the octopus full protagonism, we replace the traditional cachelos (boiled potatoes) with an airy potato foam from the siphon.

Có rất ít món ăn khiến tôi cảm thấy gắn bó với đất nước Tây Ban Nha của mình như bạch tuộc Galicia. Mặc dù mang tên “Galicia”, món ăn này có mặt ở khắp mọi miền quê hương chúng tôi.

Ở đây, bạch tuộc là ngôi sao chính, còn các nguyên liệu khác chỉ nhẹ nhàng bổ sung hương vị: paprika ngọt nhập khẩu từ Tây Ban Nha và dầu ô liu thượng hạng Picual của Tây Ban Nha tại Casa María.

Tại Casa María, chúng tôi tinh chỉnh một chút bằng cách thêm điểm nhấn từ gel ớt đỏ và vài lá ngò. Và để bạch tuộc giữ trọn vai trò trung tâm, chúng tôi thay khoai tây luộc truyền thống (cachelos) bằng mousse khoai tây nhẹ nhàng từ bình siphon.

There are few dishes, like Galician octopus, that connect me immediately to my country, Spain. Although called “Galician,” this dish is found in every corner of our land.

Here, octopus is the star, with the rest of the ingredients adding subtle notes of flavor: Spanish imported sweet paprika and the finest Spanish Picual extra virgin olive oil at Casa María.

At Casa María, we refine it slightly by adding accents of red pepper gel and a few coriander leaves. And to give the octopus full protagonism, we replace the traditional cachelos (boiled potatoes) with an airy potato foam from the siphon.

Có rất ít món ăn khiến tôi cảm thấy gắn bó với đất nước Tây Ban Nha của mình như bạch tuộc Galicia. Mặc dù mang tên “Galicia”, món ăn này có mặt ở khắp mọi miền quê hương chúng tôi.

Ở đây, bạch tuộc là ngôi sao chính, còn các nguyên liệu khác chỉ nhẹ nhàng bổ sung hương vị: paprika ngọt nhập khẩu từ Tây Ban Nha và dầu ô liu thượng hạng Picual của Tây Ban Nha tại Casa María.

Tại Casa María, chúng tôi tinh chỉnh một chút bằng cách thêm điểm nhấn từ gel ớt đỏ và vài lá ngò. Và để bạch tuộc giữ trọn vai trò trung tâm, chúng tôi thay khoai tây luộc truyền thống (cachelos) bằng mousse khoai tây nhẹ nhàng từ bình siphon.

Others say the term (tapa) comes from covering a drink with a small portion of food to keep out sand or insects. Whatever the true origin, (tapa) has evolved into the deeply Spanish social tradition we know today — and which we bring to you here in Thảo Điền, HCMC. 🍷🥘✨
